A few of my favorite things…


As impressive as zesty gourmet meals can be, nothing beats simple favorites: bananas and peanut butter; waffles and ice cream; the toll house chocolate chip cookie recipe from the chocolate chip bag; a bowl of blackberries and cream; grilled cheese and tomato soup; funfetti cake complete with rainbow chip frosting; or even  instant vanilla pudding (which miss Kayla made tonight and was a tasty dessert). I am certainly not a fan of E-Z mac, but I believe that there are some comfort foods that don’t need to be complicated.

Here is one of my favorite easy bakes:

Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg

roll into balls and bake for 10 minutes at 350 degrees.
dont forget to use a fork dipped in sugar to press the balls down and create the classic “criss-cross” pattern on top of the cookies.

this is a great recipe to customize with crunchy add-ins like raisins, chocolate chips, oatmeal, or nuts.
vanilla is another good addition.

or you can just keep it simple.
