Chicken and Vegetable Pot Pie

“Who needs butter? This pie get its velvety richness from olive oil, wine, low-fat milk, and a double dose of vegetables.”

This intro from a recipe from Real Simple Magazine was hard to ignore. Although it did take a while to prepare, it was worth it. In order to manage the time frame, I prepared the chicken and vegetables earlier in the day and had them ready in prep bowls. Also, I added a crust to the bottom as well, because, well, I like crust!
