chicken curry



1-2 tbsp oil
1 medium onion diced
1 lb chicken cut into bite-size pieces
2 ½ cups water
1 package Golden Curry medium-hot***
White Rice (enough for 5 servings)

•    Sour cream
•    Shredded sweetened coconut (toasted)
•    Canned mandarin oranges
•    Raisins
•    Cashews

Spread coconut on a baking sheet and toast in oven on broil until golden brown.

Sauté onion with oil in a pan. Add the chicken. When the chicken is cooked, add the water and curry. Stir until the curry makes a thick sauce. Serve over rice with the 5 toppings.

*** The Golden Curry is the most important ingredient. I have found it at Ralphs and Raley’s but most other large supermarkets should carry it.
