spoon bread

spoonbreadI would describe this as “cornbread-pancake-soufflé-flan.” If you like those flavors/textures you should try hot and sweet spoon bread.

1 cup boiling water over ½ cup corn meal.

Beat in…
½ cup milk
½ tsp salt
1½ tsp baking powder
1 tbsp soft butter
2 eggs, well beaten

Pour into a buttered 1 qt casserole or baking dish. Bake just until set at 400 degrees for 20-25 minutes. Serve piping hot with butter and syrup.
