Toasted Walnut Spinach Salad with Basil Dressing


Actually, I candied my walnuts so maybe it should be called “Candied Walnut Spinach Salad.”

I don’t really know the proper way to prepare candied nuts but here is what it tried:

Put chopped walnuts into a bowl, drizzle with a small amount of honey or melted butter, then add brown sugar, cinnamon, and a little nutmeg and toss it until evenly coated. Spread walnuts on a baking sheet and place in the oven on broil until they begin to brown. **Keep a close watch on the walnuts while they are in the oven because they will burn very quickly!

dressingFresh Basil Dressing:

  • 1/4 cup red wine vinegar
  • 2 tbsp chopped fresh basil leaves
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1/2 cup oil
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper

Combine vinegar, basil, sugar, and garlic.

Slowly whisk in oil until emulsified.

Add salt and pepper.

Pour basil dressing over fresh spinach topped with sliced avocado, feta cheese, and toasted (or candied) walnuts.
