Rainbow Pasta Salad


maleesa and i made this healthy and delicious pasta salad right before our last final exam of the quarter. it was easy to throw together using whatever ingredients we had in our fridge. it was colorful, flavorful, and made our tummies full!

1) place in large bowl:

  • cooked and cooled whole wheat pasta
  • spring mix or spinach mix lettuce
  • crumbled bleu cheese
  • chopped red pepper
  • shredded carrots
  • slivered almonds
  • homemade balsamic vinaigrette

2) mix and serve

img_53051I made this again for dinner so all the roommates could try it.

This time I added red kidney beans for more protein and used a pre-made balsamic vinaigrette to make it one step easier on myself.
