Goat Cheese Quesadillas


I found this recipe from a restaurant at home called Aqui. It’s really easy to make, and serves quite a few for a reasonable price. Or, you can make extras for later! I didn’t have a recipe, so everything is just how much you think will taste good…

Goat cheese (about 1 oz…the best price I’ve seen is at TJ) spread onto half of a tortilla
Monterey Jack + Cheddar Cheese slices placed over the goat cheese
1 Can of Corn, sprinkled over the cheeses

Cook on medium heat in pan, lightly butter top/bottom of quesadilla. Watch to make sure it doesn’t burn, and just cook until the cheese is melted.

Heat refried beans on stove. Garnish with roasted chili peppers (TJoes), feta cheese, and crushed pecans, or even any nut/seed would taste good.

Serve with a side of fresh avocado!
