Lemon Pasta+Glazed Butternut Squash

Lemon Pasta


  • Whole Wheat Pasta (any shape)
  • Asparagus
  • Goat Cheese/ Chevre
  • Fresh Lemons
  • Toasted Pine Nuts
  • Salt
  • Pepper


Cook pasta according to package directions. Cut asparagus into bite-sized segments and toss in with the pasta for the last2-3 minutes of cooking. Zest a few lemons. Drain pasta and asparagus and pour immediately into large bowl. Add in goat cheese, lemon zest, lemon juice to taste, pine nuts, salt, and pepper. Mix until the cheese has melted and all ingredients are evenly distributed. Garnish with lemon slices and serve.

  • Butter
  • Brown Sugar
