Mini Insalata Caprese with Homemade Crackers


Insalata Caprese:

16 oz cherry tomatoes halved

8 oz mozzarella balls halved

1 bunch fresh basil finely chopped

very light drizzle of olive oil

generous drizzle of balsamic vinegar

salt, pepper, and herbs de Provence (optional) to taste


Homemade Chips:

Brush two or more whole wheat corn tortillas (Trader Joe’s) with olive oil.

Sprinkle salt, pepper, sesame seeds and chopped pine nuts on top.

Cut tortillas into triangles and place on baking sheet.

Broil until golden brown and crispy.
