Moo Shu Beef Lettuce Wraps

Heat a lightly greased skillet and add 1 pound ground beef, 1 thinly sliced medium yellow onion, 2 Tbsp fresh minced ginger root, and 2 minced garlic cloves. Cook until meat is browned and onion is soft, breaking up the meat as it cooks.

Add 2 cups thinly sliced bok choy, 1 thinly sliced red bell pepper, 2 cups thinly sliced small mushrooms, and 2 Tbsp soy sauce.

Cook stirring occasionally until bok choy is wilted and pepper is crisp-tender.

Clean several leaves of Bibb Lettuce and arrange on plate.

Spoon beef mixture into lettuce leaves. Serve with extra soy sauce if desired.
