Half-Batch Mini Banana Bran Muffins

In trying to create a healthy bran muffin recipe that both tasted good and would fit the limited ingredients I had on hand, I came up with this. The muffins turned out sweet and moist. The subtle vanilla-cinnamon flavor goes so well with the banana. You cant even tell they are low fat!

Ingredients:

  • 2 Tbsp butter
  • ½ cup unsweetened applesauce
  • 1/3 cup packed brown sugar
  • 3 ripe bananas mashed
  • 1 egg, plus 1 egg white
  • ½ tsp vanilla
  • 1 cup bran
  • ¾ cup flour
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ¾ tsp baking soda

Optional: ½ cup shredded coconut

Directions:

  1. Set oven to 375 degrees.
  2. Put butter in mixing bowl beat until creamy. Add in applesauce and sugar; blend well. Stir in mashed bananas, eggs, and vanilla. Beat until batter is smooth.
  3. In a separate bowl mix together remaining dry ingredients, then add to batter and mix well.
  4. Lightly grease a mini muffin or cupcake pan with olive oil or use mini muffin paper liners. Spoon batter into muffin holes almost filling them.
  5. Bake 12 minutes. Enjoy warm.

Makes about two and a half dozen mini muffins.
