First day of school. First day of food.

Starting the inyomouth school year off strong with a delicious recipe originating from the Real Simple cookbook, but personalized by EV.

Start by washing and cutting the potatoes. Season w/ salt and pepper. In a large pan, sautee for 10-15 minutes in some olive oil. Last 5 minutes add some chopped garlic. Transfer to a baking pan into a 425 degree oven for another 10-15 minutes.

Next, season chicken w/ salt and pepper and cook 2-4 minutes a side (use chicken cutlets or pound the chicken so it cooks quicker) in the same pan you used for the potatoes w/ some olive oil. Remove chicken. Deglaze the pan with 3/4 cup white wine and 1/2 cup chicken broth (the measurements are approximations). Add some garlic. Let it reduce for a few minutes. Add about 3 tablespoons of fresh herbs (I use chives, rosemary, and thyme). Stir in a tablespoon or two of cold butter (the cold makes for a smoother sauce). Adjust seasonings. Throw the chicken back in for a minutes or so to reheat and you’re done. See the picture above for serving suggestions.

Life lessons: Don’t forget to prep and start cooking your green beans at least before you start cooking the chicken. Don’t break your pepper grinder mid grind over your pan thus spilling whole peppercorns all over the kitchen and in your garlicwhitewineherby sauce. That’s all for now.
