Pasta Creations


I have been making this stuff for years. I take a boring, store bought jar of pasta sauce, add few things, and suddenly have a delicious and secretly nutritious meal.  It’s super easy AND super cheap AND could feed an army.

Here it goes:

Cook about a pound of ground turkey in a large pan. Remove from the pan and set aside.

Chop: 1 medium onion, 5 cloves garlic, 1 anaheim pepper, 1 red bell pepper, 1 zuchini, 1 summer squash

Add all chopped veggies to the same pan with some olive oil. Season with salt and pepper. Saute until veggies are carmelized. Deglaze the pan with about a cup of white wine. Let it simmer for about 2 minutes. Add jar of store bought red spaghetti sauce. Add cooked ground turkey meat back.  Stir it all together. Season with salt and pepper, and of course, a little bit of brown sugar to taste. Let it simmer on low for a few minutes with the lid on.

Cook your noodle of choice. Drain your noodle of choice. Pour sauce over noodles. Toss in 3/4 a bag of fresh baby spinach and 1/2 cup of shredded mozzerella cheese. Serve along side homemade garlic bread. Carbs upon carbs. We’re big fans. Don’t fret, you’ll also get a full serving of vegetables and they will taste really good.
