Honey Lemon Chicken with Pear Bacon Salad and Corn Muffins

honeylemonchicken

This was REALLY tasty. I would like to eat it once a week. I hope you try it and like it as much as I did. Recipe only adapted slightly from the delicious Crepes of Wrath food blog.

Honey Lemon Chicken

1.5 pound chicken breasts
few pinches salt and pepper
1 tablespoon olive or peanut oil
1 teaspoon ground ginger
zest of 1 lemon
juice of 1 lemon
2 1/2 tablespoons honey
1/4 cup low-sodium chicken broth
1 tablespoon flour to thicken sauce (if necessary)
salt and pepper to taste

1. Cut the chicken into bite-sized pieces and season the chicken with salt and pepper.

2. Heat the oil in a pan and add the chicken. Saute until almost completely cooked.

3. Combine the lemon zest, lemon juice, honey, ground ginger, and chicken broth in a small bowl, then pour over the chicken. Allow to cook until slightly thickened, then season with salt and pepper to taste, if necessary. Serves 4.

Sweet Pear and Apple Salad

2 pears
1/2 cup roughly chopped walnuts
1/4 cup jumbo raisins
7 slices bacon, chopped into bite sized pieces
1 bag of mixed greens
juice of 1 lemon
3 tablespoons balsamic vinegar

1. Thinly slice your pears. Toss with the walnuts and raisins.

2. Fry the bacon until crisp, then set aside to cool.

3. When the bacon is cool, toss with the fruit, walnuts, raisins, and mixed greens.

4. Whisk together the lemon juice and balsamic vinegar. Pour over the salad and toss. Serves 4.

Cornbread Muffins

I like to use Jiffy. So easy and yummy.
