Pizza Creations

This week is CRAZY and I didn’t have time to think of anything new and cool to make, so I decided I’d go for an easy inyo favorite… pizza. No recipe following, just throwing together flavors I think would go good together with some nutritious value.

Pizza 1: VEGETARIAN

Ingredients– Trader Joes Garlic & Herb pizza dough, *** basic red sauce, shredded mozzarella cheese, baby spinach, half an onion thinly sliced, 6 mushrooms thinly sliced, more shredded mozzarella cheese, 4 thinly sliced tomatoes, a few more spinach leaves, and parmesan cheese

Heat oven to 450. Split dough in half and roll, throw, stretch it out into two medium sized pizzas (use flour to keep it from sticking). Place the dough onto two separate baking sheets with some flour. Layer the ingredients in the order listed above. Place both trays in oven and cook 10 minutes. Switch racks and then cook another 5-8 minutes.

Pizza 2: BACON, CARMELIZED ONION, SWEET CORN, SPINACH

Ingredients– Trader Joe’s whole wheat pizza dough, ***basic red sauce, shredded mozzarella cheese, baby spinach, 1 onion carmelized, 1/3 cup corn, 8 slices of cooked turkey bacon, more shredded cheese, and parmesan

***Basic Red Sauce

I don’t like many store bought sauces so I make my own. This is really good with pasta too.

1 onion finely chopped, 4-5 gloves of garlic chopped, salt, pepper, 2 T brown sugar, 1/3 cup white wine…most importantly, 1 can of SAN MARZANO crushed tomatoes. You must use these. They are the best.

Saute the onion and garlic until translucent, add wine, tomatoes, and season until it tastes right.
