Sweet and Sour Chicken

I love chinese food, but it’s always fried and super unhealthy. I decided to invent a healthier version of one of my favorite dishes; sweet and sour chicken. It consists of chicken, onion, red pepper, and pineapple chunks, coated my homemade sweet and sour sauce (An eyeballed mixture of ketchup, mustard, soy sauce, rice wine vinegar, garlic, ginger, pineapple juice, brown sugar).

Season cubed chicken with salt, pepper, and a little bit of flour. Brown in a pan with olive oil (don’t worry about cooking it all the way through yet). Remove chicken. Saute onions and peppers in the same pan. Add pineapple chunks and caramelize before adding the chicken and then the sauce. Cook on high while stirring until everything is combined and chicken is cooked (Like 3-5 minutes). Serve alongside brown rice and a vegetable.
