Chicken Parmesan

No recipe on this one, just a combination of two different things I know how to make.  Homemade tomato sauce, basil breaded chicken, and gooey cheese befriend each other for an evening of cheap deliciousness.

Tomato Sauce:

1 onion

4-5 gloves of garlic

Fresh basil

1 cup white wine

1 can crushed tomatoes

Salt, pepper, sugar for seasoning

Sautee onions, garlic, and basil in some olive oil. After they are translucent, add the white wine. Let the alcohol cook off for like 2-3 minutes. Add tomatoes. Stir. Season. Taste. Adjust seasoning.

Spread some of the sauce on the bottom of a 13×9 foil lined pan

Breaded Chicken:

Chicken (I got 4 huge pieces from food for less that I cut in half and pounded out to about an half inch thick. So total of 8 pieces. It was a lot of food. We invited friends.)

1 cup of flour seasoned with some salt/pepper

4 eggs thinned with some milk seasoned with some salt/pepper

2 cups bread crumbs seasoned with finely chopped fresh basil and montreal steak seasoning

Coat each piece with flour, egg wash, and then the basil bread crumbs.  The key is getting the pan realllly hot, making sure there is enough olive oil and space  for the chickens to roam. I cooked a max of 3 pieces at a time. I wasn’t focused on cook time so much as I was watching for brown-ness. (If your pan is hot enough, the meat won’t be done all the way through by the time it’s brown. This is what you want). Once your pieces are golden brown, place them in your 13×9 pan and top them with more sauce. Perch a generous handful of mozzarella cheese atop each chicken. Sprinkle with some parmesan cheese and a tablespoon of balsamic vinegar.

Put the pan into a 350 degree oven for about 10 minutes to melt the cheese and finish cooking the chicken. At the last minute I turned on the broiler to make the cheese brown and crispy and gooey.

Serve alongside a caesar salad and whole wheat noodles tossed in the remaining tomato sauce.
