Chicken Sausage Penne with Mascarpone Sauce

An easy spin-off of chicken apple sausage recipes and Erin’s pasta recipe, this one has a GREAT sauce!


1 package penne pasta

1 package of (5) Spinach + Wine Pre-Cooked Chicken Sausage (Food 4 Less!), sliced into coins

1 Red Bell Pepper, chopped

1 medium yellow onion, chopped

3/4 cup white wine

3 of 4 handfuls or fresh baby spinach

1 small tub mascarpone cheese

1 jar marinara sauce

Olive oil, S + P

In a sauce pan, heat 2 tablespoons of olive oil over medium-high heat. Saute the onion and red bell pepper until carmelized (10ish minutes). Season with salt and pepper. Add the white wine and reduce to a simmer for a few minutes. Add in the sausage and marinara suace. Simmer for a few minutes with lid on.

Boil pasta accordingly. Instead of draining pasta in colander, use one of those spoons with the holes in them (you know what I mean), and spoon out the pasta to large bowl. Mix sauce in with pasta by the spoonful, mixing to blend ingredients. Mix in the spinach, so it wilts in the sauce. Finally, spoon 3/4 of the tub of mascarpone cheese in with the mix, so it melts within the sauce/pasta mixture. MMMMMmmmm soo good! The cheese definitely makes it. It adds a nice, light creaminess to the regular tomato flavor.
