Lemony Goat Cheese Chicken

Another Real Simple treasure. I could spend days sifting through recipes on that website. I made a few changes to suit my tastes, but for the most part, it was a classy, tasty, and quick recipe. Enjoy!



  • 1 bag of chicken tenders from Trader Joe’s
  • 2 tablespoon olive oil
  • 3 garlic cloves, peeled and cut in half lengthwise
  • 1 teaspoon kosher salt
  • freshly ground black pepper
  • 1- 1 1/4 cup low-sodium chicken broth (1 if you add 1/4 cup white wine like I did)
  • 2 teaspoons fresh chopped parsley
  • 1 teaspoon grated lemon zest (small squeeze of lemon juice)
  • 4 ounces soft goat cheese


  1. Heat the oil and garlic in a large skillet over medium-high heat until the oil shimmers and the garlic browns. (Don’t burn the garlic.) Remove garlic. Turn up heat.
  2. Add the chicken breasts and cook until golden, 3 to 5 minutes on each side. Remove chicken. Set aside
  3. Add the salt, pepper, chicken broth (wine too if you want), parsley, lemon zest and juice. Increase heat to high and boil the sauce until thickened or syrupy, 3 to 5 minutes. Whisk in the goat cheese and pour the sauce over the chicken or put chicken back in pan to reheat. Serve alongside brown rice and a vegetable.


  1. erin, why you gotta go and use size 24 font??

    • It is definitely not because I don’t know how to change the font back to normal after I copy and paste, because I totally know how to do that duh.
