Caramelized Onion, Wilted Spring Greens, Pine Nut, and Goat Cheese Baked Pitas with a side of Candied Butternut Squash

Great balance of flavors. Simple to make. Save time by putting the squash in the oven while you caramelize the onions.

Baked Pitas

Ingredients:

1 large sweet yellow onion
1 tbsp olive oil
1 tbsp brown sugar
a pinch of salt
6 whole wheat pitas
4 large handfuls mixed spring greens
1/3 cup pine nuts
1/2 cup goat cheese

Directions:

Heat olive oil in a skillet while you chop the onion into thin strips. Saute the onion for 10 minutes then add the brown sugar and salt and cook for about 5 more minutes or until the onions caramelize.  Add the spring greens to the onions and stir until the greens begin to wilt then remove from heat. Divide the onion-greens mixture between the pitas.  Sprinkle pitas with crumbled goat cheese and pine nuts. Bake at 375 degrees for 10 minutes.

Butternut Squash

Ingredients:

1.5 lbs cubed butternut squash
3 Tbsp butter
1/4 cup Maple syrup
1 tsp cinnamon
a pinch of salt

Directions:

Arrange the squash in a baking pan. Melt the butter in a glass measuring cup. Stir in the rest of the ingredients. Pour over the squash and toss to coat. Bake at 400 degrees for 20-25 minutes.
