Breakfast Casserole

I’m not a big fan of midterms. I am, however, a huge fan of breakfast for dinner. Specifically, breakfast casserole for dinner. I have no idea where this recipe is from, but I do know my family eats this every Christmas and Easter brunch. It’s the definition of comfort food for me. Few ingredients, minimal prep time, this one’s a winner.

Breakfast Casserole

6-7 Slices of French Bread pre-sliced and cubed

1 lb sausage or ham

½ lb American cheese in small pieces

3 eggs beaten

2 cups milk

½ tsp dry mustard

½ tsp salt

¼ 1b butter or  margarine melted

Grease 9×13 pyrex dish lightly.  Mix cubed French bread, cubed ham, and ¾ of the cheese in the baking dish.  Sprinkle with remaining cheese.  Mix together the eggs, milk, dry mustard, and salt.  Pour over ham and bread mixture.  Pour butter over all.  Cover and refrigerate overnight. Uncover and bake at 325 degrees for 1 hour.
