Chicken Marsala Pasta

Inyomouth, stop making me tell my secrets! I guess this is both a good and bad thing. Bad, because with the revealing of this recipe Maleesa may no longer have the need to keep me around.  Good, because this culinary concoction of all things good will bring joy to the world.

Chicken Marsala Pasta. Enjoy.


Chicken Marsala Pasta

1-2 pounds of chicken

Olive oil, salt, pepper, brown sugar

1 large onion, sliced

1-2 packages of mushrooms, sliced

1 1/4 cup marsala wine

1/4 cup chicken broth

3 T Dijon Mustard

1 Tub marscapone cheese

Penne Pasta

Parmesan cheese, 2-3 T chopped flat leaf parsley

Season the chicken with salt and pepper and cook in a pan with olive oil.  Remove chicken, chop into pieces, and set aside. Put more olive oil in the pan and add sliced onions and mushrooms. Sprinkle with a tablespoon of brown sugar. Saute for about 10-15 minutes. Once the onions and mushrooms are golden brown, pour marsala wine and chicken broth in the pan and boil for 3-4 minutes. Turn heat down to low and add mustard, marscapone, and chopped chicken. Season to taste. Once, your penne pasta is cooked, pour the sauce over the noodles and toss with parmesan cheese and parsley.
