Creamy Green Pasta

Inspired by Giada de Laurentiis and her easy pasta dishes, the green sauce takes only a minute to make in the food processor!

Ingredients:

1 large clove garlic
5 oz goat cheese
5 oz (light) cream cheese
1/2 large bag spinach
1 bag whole wheat pasta
1 package sun dried tomato sausage
1 large bunch asparagus
Salt & Pepper
1/2 cup chopped basil (garnish)
1/4 cup grated parmesan cheese (garnish)

Directions:

Cook pasta according to package directions in a large pot.

While pasta cooks, pulse garlic in food processor until minced. Add in cheeses and pulse to blend. Add spinach a handful at a time and pulse until the sauce resembles a light green avocado color.

Slice sausage and cut asparagus into small pieces and saute in pan with a drizzle of olive oil.

Before draining pasta reserve a few spoonfuls of pasta water. Add the pasta water with the sauce to the noodles. Sprinkle with salt and fresh ground pepper. Stir a few handfuls of spinach leaves and allow them to wilt. Stir in the asparagus and sausage. Garnish with basil and parmesan.
