Lemon Basil Chicken

Oh yeah. Lemon Basil Chicken. This may or may not be why I have friends. Tender pieces of browned chicken smothered in a sweet, tangy, lemon-basil-y sauce. Serve over rice for a deliciously simple fan favorite.


Lemon Basil Chicken

2 Pounds chicken breasts cut into 1 inch cubes

½ teaspoon salt

¼ cup all purpose flour

2 tablespoon olive oil

1 bunch green onions, thinly sliced

1 cup lemon curd

2/3 cups chicken broth

2 tablespoons balsamic vinegar

½ cup fresh basil leaves chopped

1 lemon, juiced and zested

Season chicken with salt; coat with flour. Heat oil in a large skillet. Stir-fry chicken until golden, about 5 minutes.  Remove chicken from pan; add onions.  Saute onions until soft. About 5 minutes. Add curd, broth, vinegar and lemon juice; scrape up any drippings while stirring.  Add chicken back to the pan along with basil and 1 teaspoon of lemon zest.  Heat through and serve immediately.
