Cornflake Chicken Fingers + Honey Balsamic Dipping Sauce

This Cornflake Chicken recipe is a healthy alternative to battered deep fried chicken strips and even taste better!  This was a rather stressless tuesday, so I decided to take the time to make homemade sweet potato fries. Back by popular request, these chicken fingers and sweet potato fries are the perfect match for honey balsamic dipping sauce.  Oh how I love finger food for grown ups.

Cornflake Chicken Fingers

1 Bag of chicken tenders, cut in half lengthwise

2 eggs

2 T yellow mustard

2 T Honey

1/2 box cornflakes crushed with 1/2 t black pepper

Toss chicken in egg, mustard, and honey. Coat in cornflakes and pepper. Place on a baking sheet lined with foil for easy clean up.  Bake for approximately 20 minutes at 400 degrees.

Sweet Potato Fries

4 sweet potatos, peeled and cut into fry-like shapes

1 container canola oil


Heat up oil and fry potatoes in several batches until. Let them drain over paper towels and sprinkle with salt while warm.

Honey Balsamic Dipping Sauce

1 cup mayonaise

3 T Balsamic vinegar

2 T Honey

Combine and start dipping.
