The Original Mango Chicken Sausage

Because this is my last quarter here in the inyomouth kitchen, I have attempted to make all of my favorite creations so I could share the recipes with you all. This one is highly sought after by all who have tasted it (my roommates). I saute mango chicken sausage, then add peppers, onions, and coat everything in a homemade sweet and sour sauce that will please your taste buds when served over freshly cooked brown rice. This recipe is a real 30 minute meal. In fact, I made it on a whim right before work and had time to deliver some to the overworked, sleep deprived Brita and Maleesa in studio.

Mango Chicken Sausage

1. Cut up sausage and brown in some olive oil. Add peppers and onions.

2. Saute until onions and peppers are cooked.

3. Meanwhile make the sauce which is an eyeballed mixture of Ketchup, mustard, 2 cloves garlic, soy sauce, rice wine vinegar, and brown sugar.

4. Turn down the heat and add sauce to the mixture and cook for another 2-3 minutes. Serve hot over brown rice.
