Prosciutto & Roasted Red Pepper Sandwich

After a long day in studio, I perused the Real Simple website for recipes and found this. And I must say, it was amazingly delicious. It was my first time making a sandwich that wasn’t just turkey & cheese. And i learned how to roast red peppers!  Try it out–you won’t regret it.

Prosciutto & Roasted Red Pepper Sandwich
adapted from Real Simple


1 baguette
2 tablespoons dijon mustard
1 package prosciutto
4 oz sliced asiago, parmesan or some other hard cheese
1 jar roasted red peppers (or fresh peppers that you roast from scratch)


Roasted Red Peppers (i highly recommend making them yourself)

1. Place two whole red peppers on a baking sheet and broil on high in the oven for about 30 minutes (or until skin of peppers have blistered/blackened.  Make sure you keep an eye on them and turn them frequently so they don’t burn!

2. Take out of oven when the skin has mostly bubbled and place in an air-tight container with the lid on (we just used Gladware tupperware).  Cover for 15 minutes (this will allow for the steam inside to loosen the skin).

3. Peel off the skin & remove seeds, then they’re ready to place on the sandwiches!


1. Spread mustard on one side of the baguette, then layer slices of proscuitto, bell peppers, and cheese on top.
2. Cut the baguette slanted and serve.

Simple as that!
