Sweet Potato Pizza with Cheddar and Pine Nuts

This pizza is quick to throw together for a weeknight meal and saves well (for those who don’t make it to dinner because their studio professors don’t believe in students seeing the sunshine). Add a bagged salad for an easy side.

Ingredients:

1 pound store-bought pizza dough (I used whole wheat)
cornmeal to dust the pan (or use a baking stone)
1/2 pound sweet potatoes—peeled thinly sliced
1/2 red onion, thinly sliced
1/4 cup pine nuts
1 tablespoon fresh sage leaves, chopped
1 tablespoon olive oil
1/2 tsp salt
1/4 tsp peper
1 cup grated extra-sharp cheddar chese

Directions:

Heat oven to 400° F. Roll, stretch, or “Italian chef style”  toss the dough until it fills the baking pan (or stone). In a large bowl, roughly mix the squash, onion, pine nuts, sage, oil, salt, and pepper. Scatter over the dough and sprinkle with the cheese. Bake following dough package directions or 25 to 30 minutes until the crust is golden and veggies looks done. Serve with a side like a spinach salad.
