Broken-Heart Cookies

...because some of us are not coping so well in Erin’s absence.

and baking brings me joy.

These cookies could also be titled “ChocolateChip-Coconut-Oatmeal-ButterscotchPudding-cookies.”

I tossed in all the leftover ingredients I could find in the cupboard.

For extra happy cookies.

Ingredients:

1 cup butter that has come to room temperature
1 cup packed brown sugar
1 (3.4 oz) butterscotch pudding mix
2 eggs
1 tsp vanilla
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 1/2 cups quick oats
1/2 cup shredded coconut
1 cup chocolate chips

Directions:

Preheat oven to 350 degrees.
Cream together butter and sugar.
Blend in pudding mix and remaining wet ingredients.
Combine flour, baking soda, salt, oats, coconut in a separate bowl.
Add to the wet ingredients and mix well.
Stir in chocolate chips.
Roll or drop the dough into small round heaps on a baking sheet.
Bake 10-12 minutes until edges are golden and centers are nearly set.

Enjoy warm with a glass of cold milk to comfort your aching heart.
