Mandarin Orange Salad


Mandarin Orange Salad:

In a large bowl add: 1 bag spring greens;  1 small can mandarin oranges;  1/4 cup finely diced red onion
In a small bowl add:  1/4 cup balsamic vinegar;  1/4 cup olive oil;  plus a sprinkle of salt.
Whisk together vigorously until the dressing is thickened and emulsified.
Pour vinaigrette over salad.
Toss and serve with Stuffed Bell Peppers.
