Stuffed Bell Peppers

Stuffed Peppers:

In a large bowl mix together:

2 cans tuna
1/2 cup chopped celery
1/2 cup chopped green onions
1/2 cup shredded carrots
1 can white kidney beans
1 tbsp mayo
1 tbsp fat free sour cream
2 tbsp dijon mustard
2 tbsp pickle relish

Cut the tops off of 4 red bell peppers and rinse inside to remove any loose seeds.
Stuff peppers with tuna salad and serve alongside Mandarin Orange Salad.
