Easy Tacos and Confetti Corn Salad

These tacos get their flavor from the ground turkey which is cooked with cumin and mango-lime salsa.  The corn salad rounds out this easy to make meal which feeds six.

Since Anna and Lauren were joining the four of us for dinner, I proposed a contest: whoever arranges their food the nicest for me to photograph will get their plate’s picture featured on the blog.  This challenge brought out quite the food-styling talents from all the girls.  I really couldn’t choose because they were all so beautiful.  But maybe you can help me decide which plate you would most like to eat.  Leave a comment with your VOTE.

Easy Tacos:

Ingredients:

1 lb ground turkey meat
1 tsp cumin
1 jar mango-lime salsa
2 avocados cubed
1 bag mexican blend cheese
1 tub light sour cream
1 bunch cilantro
10-14 taco shells

Directions:

Brown turkey in a pan. Add cumin and salsa and cook until hot and slightly thickened. Serve inside taco shells with toppings.

Corn Confetti Salad:

Ingredients:

1 can corn drained
1 can black beans drained
1 red bell pepper chopped
1 handful cilantro leaves
Lemon Juice
Salad Dressing

Directions:

Combine ingredients in a bowl, toss and serve.
