A unique and delicious cake inspired by SmittenKitchen for Xander’s 22nd birthday.
This cake has all the warm and familiar flavors of a yellow cake but with a bright hint of orange zest. Surprising ingredients like plain yogurt, olive oil, and berries create a relatively healthy desert.

Ingredients:
CAKE:
1 cup plain yogurt
1/3 cup olive oil
1 cup sugar
zest of two oranges
1/4 cup fresh squeezed orange juice
2 eggs
1 2/3 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
SAUCE:
1 1/2 cups frozen strawberries, thawed
1/4 cup orange juice
1/4 cup sugar
Directions:
CAKE:
Preheat the oven to 350 degrees. Butter a 9×13 baking pan and dust with flour.
In a large mixing bowl, whisk together the yogurt, oil, sugar, orange zest and orange juice. Add the eggs one at a time, whisking well after each addition. Combine dry ingredients in another bowl. Sift into wet ingredients and stir with a spoon until just combined.
Pour the batter into the prepared pan and bake for 30 minutes, until the top is golden brown and a knife inserted in the center comes out clean. Let cool slightly before slicing and serving.
SAUCE:
Pulse all ingredients in a food processor until smooth. Refrigerate until ready to spoon over cake.
SERVING SUGGESTION:
Garnish cake slices with powdered sugar, strawberry sauce, homemade whipped cream, and berries.
