Quiche Take Two

This CARAMELIZED ONION BACON QUICHE follows the basic recipe from last week’s vegetable quiche but changes some of the flavors. With sous chefs Lauren and Kristina, this meal came together quick. But don’t invite too many people to the table, because you will want seconds and thirds.


Here is what you do:

Prepare the crust. Fry up 4-6 slices bacon until crisp. Transfer to a paper towel and crumble into small pieces. Dice an onion and caramelize it in the bacon grease. Cut two mediumsweet tomato into cubes. Grate some sharp cheddar cheese. Whisk together 5 eggs, 1/2 cup half and half, and a few sprinkles of nutmeg. Fold ingredients into the egg mixture and pour into crust. Bake at 400 for about 30 minutes or until it is cooked through.

We enjoyed this quiche with a salad of spinach, candied pecans, avocado, and a homemade honey mustard  balsamic vinaigrette.
