Fig and Onion Pizza with Lemon-Chive dressed Arugula Salad

In this bountiful meal, sweet figs, caramelized onions, salty Parmesan, and warm goat cheese top a wholesome wheat crust and the argula’s spicy flavor harmonizes with a light lemon and chive dressing.  Delicious!


Fig and Onion Pizza:

2 Vidalia onions, thinly sliced
8 dried figs, thinly sliced
2 Tbsp olive oil or butter
Whole wheat pizza dough
1/4 cup freshly grated Parmesan cheese
1/4 cup Goat cheese


Heat oil or butter in a pan over medium-high heat.  Add onions and sauté until golden.  Add figs and continue to cook over medium heat until the onions are caramelized.  Top pizza dough with onions and figs.  Sprinkle with parmesan.  Bake according to dough directions.  Remove from oven and crumble goat cheese over hot pizza.

Lemon-Chive dressed Arugula Salad:

2 Tbsp fresh lemon juice
4 tsp olive oil
1 Tbsp water
1/4 tsp salt
1/4 tsp pepper
1 Tbsp finely chopped chives
6 cups arugula
1/4 cup shaved fresh Parmesan cheese (optional)


While pizza is baking, whisk together first six ingredients.  Drizzle over arugula in a large bowl.  Toss with Parmesan cheese.
