B”L”T Pasta and Basil Green Beans

Bacon Linguine Tomato Pasta with onion and mushrooms served with garden-fresh basil green beans.  The pasta water makes the main dish creamy.  This recipe is adapted from Cooking Light.

8  ounces linguine
2  teaspoons  olive oil
1  chopped onion
8 slices bacon
1 1/2 cups  grape tomatoes, halved
1 package mushrooms
3 minced garlic cloves
1  teaspoon  fresh oregano
1  teaspoon  salt
1/2  teaspoon  pepper
1/2  cup shredded fresh Parmesan cheese
1 bunch fresh green beans, trimmed
2 tbsp finely chopped fresh basil
2 tsp butter
1/2 tsp salt

Cook pasta according to package directions.  Reserve 1/2 cup pasta water.  Meanwhile, cook bacon until crisp enough to crumble.  Discard fat.  Heat olive oil in a skillet and saute onions until they soften then add mushrooms and bacon and cook until the onions are browned.  Stir in garlic, oregano, salt and pepper.  Add the noodles and pasta water and cook until the liquid is absorbed.  Sprinkle with cheese and let sit, covered, while you make the green beans.  Mix green beans, basil, butter, and salt together in a microwavable dish.  Microwave for a total of 5 minutes, stirring after 2 1/2.
