Antipasto

Elegant Parmesan Herb Twists opened up the meal, wrapped in parchment collars and standing in short glasses.

Directions:

Thaw two sheets of frozen puff pastry.  While the oven preheats to 400 degrees, lay the thawed pastry on a lightly floured surface.  Brush both sheets with one egg plus one tablespoon water whisked together.  Sprinkle one pastry sheet with a mixture of  3/4 cup freshly grated parmesan cheese, 1/4 cup freshly chopped parsley, and 1 tsp dried oregano, reserving 1/4 cup of this mixture.  Place the plain pastry sheet over the sprinkled pastry sheet.  Seal and slightly flatten it by going over it gently with a rolling pin.  Using a large knife, cut the pastry in half along the short side.  Then slice along the long edge of the now halved pastry sandwiches every 1/2 inch to make about 15-20 strips.  Twist the strips a few turns and place them on a baking sheet.  Brush again with the egg and sprinkle with remaining parmesan-herb mixture.   Bake for 11 minutes.  Remove the Parmesan Herb Twists from the pan and allow them to cool for a few minutes before arranging and serving.
